Hello I have a question. How much does salt affect water activity levels in food? For example my baked goods are at 100 mg of sodium with my water activity level of 0.8. Let’s say I increased that to 130 mg of sodium what would your estimate be for the new water activity level all things remain the same? 150mg? Thank you!!!!
